It never fails. No matter how little slaw I make, I always end up with way too much. Whether you made the keto broccoli slaw, have leftover store-bought slaw, your favorite low carb slaw or have any other slaw for that matter, I've found it pairs quite well with slow-cooker pulled pork (even an Asian inspired slaw would fit the bill).
Set it and forget meals become more and more appealing to me as I age, whether it's in the slow-cooker, electric pressure cooker or a sheet pan meal in the oven. Of course, my favorite is the electric pressure cooker such as Instant Pot because it's quick, but the long, slow cook is a close second because of the aromas that fill the house for hours.
Let's dive into the recipe!
For Keto, use either lettuce wraps or cabbage, which I prefer as they're a bit more sturdy. If you're not following Keto and are simply looking for an effortless, tasty pulled pork, feel free to make it into a taco or a traditional pulled pork sandwich.
